Two Super Easy Vegan Cookie Recipes!

Next week is December and that means it’s share-plate season! Here are two super easy cookie recipes (both vegan) we kinda made up and have on frequent rotation in the BUF office lately because they’re SO delicious and super easy. We hope you love them too! Both are a great base to add other things to, if you want to get a little creative 😉

Gooey Chocolate Dreams

Ingredients

  • 3 ripe bananas
  • 1/2 cup smooth peanut butter
  • 1/2 cup raw cacao

What to do

  • Preheat oven to 180 degrees
  • Line a tray with baking paper
  • Mash bananas in a bowl
  • Add peanut butter and cacao
  • Mix until all ingredients are well combined
  • Shape into cookies and bake at 180 degrees for 15 minutes
  • Allow to cool
  • EAT UP!

Oaty Cashew Chews

Ingredients

  • 3 ripe bananas
  • 1 cup oats
  • 1/2 cup broken cashews
  • Optional: add vegan choc-chips or chopped dates

What to do

  • Preheat oven to 180 degrees
  • Line a tray with baking paper
  • Mash bananas in a bowl
  • Add oats and cashews
  • Add optional ingredient of choice (if you want to!)
  • Mix until all ingredients are well combined
  • Shape into cookies and bake at 180 degrees for 15 minutes
  • Allow to cool
  • EAT UP!
