Winter Warming Carrot Cake Oats

You totally need this oats recipe in your life for winter! It’s so easy, so yummy and SO comforting – we’ve even been known to cook it up for lunch in the office on really chilly days 😉

BUF Carrot Cake Oats

What You’ll Need (Serves 1)

B(eautiful plant-based foods)

  • 1 carrot, grated

U(nstoppable energy foods)

  • 1/3 cup oats
  • 1 serve BUF Girls vegan protein powder* (grab yours here)
  • 1 medjool date, chopped
  • 1 tablespoon walnuts, chopped

F(earless fats & flavours)

  • 1 cup coconut milk
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg

What You’ll Do:

  1. In a saucepan, add in the carrot, oats, coconut milk, protein powder, nutmeg and 1.5 teaspoons of the cinnamon. Cook for 2 – 3 minutes until the oats have absorbed the liquid.
  2. Top with the chopped date and walnuts, and sprinkle with the remaining cinnamon.

Instead of cooking in a saucepan, you can simply place all ingredients in a container, mix well and keep in the fridge overnight for chilled overnight oats, and eat them straight up, or pop them in the microwave for a fast, toasty-warm breakfast.

*Of course, you can use any protein powder of your choice for this recipe, but we recommend our BUF Girls brand, not just because it’s SO healthy (with minimal ingredients and maximum tummy-friendly, bloat-busting ingredients) but also because the vanilla-coconut flavour is just perfect for this recipe!
