I don’t know about you but this rainy winter weather has got us craving comfort food bad! Pancakes was our Sunday morning ritual growing up – lathered in too much sugar and a drizzle of lemon. They’re the ultimate weekend breakfast food and always make you feel like a big kid again.
Choosing to eat healthy doesn’t mean you have to give up your childhood traditions entirely! Those legendary banana pancakes from your childhood are about to make a serious comeback, with the addition of… chocolate! Well, cacao at least 😉
You’ll only need 5 ingredients, plus a few toppings of course 😉
What you’ll need
- 1 Banana (the larger sugar bananas work best, or 2 small lady fingers)
- 2 Eggs
- 1 teaspoon Cinnamon (optional; a pinch of nutmeg too)
- Raw cacao to taste (some love 1 teaspoon, we love a tablespoon!)
- Organic butter, or coconut oil (for frying)
+ Toppings of choice: e.g. frozen berries and Greek or coconut yoghurt, lemon and a little stevia!
Now do this
- Pop bananas, eggs, cinnamon/nutmeg and cacao in your blender and blend them up!
- Pour your batter into a slightly oiled or buttered pan over a medium heat and cook as you would regular pancakes.
- Recipe makes one large, or two small cakes.
- Serve with topping/s of choice.
