BUF Eats… Eggs!

Welcome to our BUF Eats series, where we take one hero ingredient and show you 4 healthy ways to eat it, using minimal ingredients. It’s all about giving you some new foodie inspiration, without getting complicated.

Today’s ingredient is boiled eggs – check out the video to see what we did with them, and below is an ingredients list in order of appearance.

Sian’s recipe
Boiled egg (halved) + hummus + paprika

Cass’ recipe
Boiled Egg (smashed) + lettuce leaf + avocado + salt & pepper

Leash’s recipe
Boiled egg (sliced) + celery + olive oil + chilli

Libby’s recipe
Boiled egg (diced) + cucumber + avocado + tomato + feta (all of these diced too!) + olive oil + balsamic + salt & pepper + lemon juice

P.S. Just in case you need a hot tip… our favourite way to boil eggs is to put them in a saucepan (no lid) of room temperature water, pop it on the stove and when the water starts to boil rapidly, take the saucepan off the heat, pop a lid on it and let the eggs sit in there for a minimum of 12 minutes – but it doesn’t matter if you leave them in longer as the water will cool down and they won’t over cook. Once boiled, you can keep them in the fridge for up to a week, peeling them as you need them!
